Simply allow the Yacon plant to grow all season and dieback in the fall. Dig up tubers as you would potatoes. Replace the propagation rhizomes (small red round “plugs”) into the soil for future Yacon harvesting next year. Yacon requires full sun and well drained soil. As long as the propagation rhizomes are planted 6-12 inches deep, they will come back the following year. Yacon is native to Peru but can be grown as far north as Canada.
